Authentic Salmorejo Recipe
Ingredients
- 4 ripe tomatoes, cored and roughly chopped
- 1 clove of garlic, minced
- 1 cup stale bread, crust removed and torn into small pieces
- 1/4 cup extra virgin olive oil
- 1 tablespoon sherry vinegar or red wine vinegar
- 1 teaspoon salt
- Optional toppings: diced hard-boiled eggs, crispy Serrano ham, drizzle of olive oil
Instructions
- In a blender or food processor, combine the tomatoes, garlic, and stale bread. Blend until smooth and the bread is fully incorporated.
- With the blender still running, slowly drizzle in the olive oil until well combined and the mixture becomes creamy.
- Add the vinegar and salt to the blender and blend again to combine. Taste and adjust the seasoning if needed.
- Transfer the Salmorejo to a bowl and refrigerate for at least 1 hour to chill and allow the flavors to develop.
- Serve the chilled Salmorejo in bowls. Top with diced hard-boiled eggs, crispy Serrano ham, and a drizzle of olive oil if desired. Enjoy!
