
Cinnamon Banana Rolls
Ingredients
For the rolls
- 1 cup of milk
- 1/3 cup of unsalted butter
- 2 1/4 teaspoons of yeast
- 2 bananas (slightly ripe)
- 1 egg
- 5 cups of flour
- 1/2 cup of sugar
- 1 tsp salt
For the filling:
- 2 tablespoons butter, softened
- 2 tablespoons honey or maple syrup
- 1 teaspoon ground cinnamon
For the glaze (optional):
- 1/2 cup powdered sugar
- 1-2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a small bowl, combine the mashed bananas, milk, melted butter, yeast, honey (or maple syrup), and vanilla extract. Let it sit for 5 minutes until the yeast activates.
- In a large mixing bowl, whisk together the whole wheat flour, salt, and ground cinnamon.
- Pour the wet ingredients into the dry ingredients and mix well until a dough forms.
- Transfer the dough to a floured surface and knead for 5-7 minutes until the dough becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it doubles in size.
- Once the dough has risen, punch it down and roll it out into a rectangle shape on a floured surface.
- Spread the softened butter over the rolled-out dough. Drizzle honey (or maple syrup) evenly and sprinkle ground cinnamon on top. Sprinkle the chopped nuts over the filling.
- Starting from one long side, tightly roll the dough into a log shape.
- Cut the log into 12 equal-sized rolls using a sharp knife.
- Place the rolls in a greased baking dish, leaving a little space between each roll.
- Cover the baking dish with a kitchen towel and let the rolls rise for another 30-45 minutes.
- Preheat the oven to 350°F (175°C).
- Bake the rolls for 25-30 minutes or until they are golden brown and cooked through.
- If desired, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl. Drizzle the glaze over the warm rolls.
