  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: diced cucumber, cherry tomatoes, croutons, fresh herbs

  1. In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
  2. Add the olive oil, red wine vinegar, salt, and black pepper to the blender.
