Authentic Gazpacho Recipe
Ingredients
- 4 ripe tomatoes, cored and roughly chopped
- 1 cucumber, peeled and roughly chopped
- 1 red bell pepper, seeded and roughly chopped
- 1 small red onion, peeled and roughly chopped
- 2 cloves of garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: diced cucumber, cherry tomatoes, croutons, fresh herbs
Instructions
- In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
- Add the olive oil, red wine vinegar, salt, and black pepper to the blender.
- Blend again until well combined and the desired consistency is reached. If needed, add a splash of water to adjust the thickness.
- Transfer the Gazpacho to a bowl or pitcher and refrigerate for at least 1 hour to chill and allow the flavors to meld.
- Serve the chilled Gazpacho in bowls or glasses. Garnish with diced cucumber, cherry tomatoes, croutons, or fresh herbs if desired. Enjoy!
